Tonight I opened an amazing but admittedly "too young" cab, drank some while decanting, and an hour later poured some more. There was a noticeable difference...in a good way. They say, like wine, we get better with age - and in this case the aging process via oxidation/decanting did wonders. To quote my favorite line from Sideways, "I like how wine continues to evolve, like if I opened a bottle of wine today it would taste different than if I'd opened it on any other day, because a bottle of wine is actually alive. And it's constantly evolving and gaining complexity. That is, until it peaks". Here's to never peaking. #needtobreathe — 9 years ago
