It's been a while since I've had a Gavi. Crisp yet soft, very dry minerality, lemon, and a hint of elderflower. Such a nice simple white for an aperitif, especially for this price. I tried pairing it with prosciutto and dried apricots, but it doesn’t carry enough weight (12.5% abv but feels lighter). Better with something starchy like crostini.
