Butteaux Chablis 1er Cru Chardonnay
A little more oxidative than a previous bottle. Slight aldehydic character for the first 30 minutes reminiscent of many, low SO2 wines, but mostly without apple cider flavors predominating. Seemingly freshened up with air. Rad texture with almost a brioche character I would associate with Champagne raised on lees. Probably a polarizing Chablis for many, and not really my preferred style or even true, 1er Cru quality. The cool kids assuredly adore.

Jun 2nd, 20202014 Vintage. 12% Alcohol. We usually cellar our Chablis longer, but decided to open a younger bottle to avoid potential premox. A wonderful Butteaux, but seemed wanting more acidity for lift. Decent value at $50 compared with the big guns.

Mar 31st, 2020Killer Chablis. Very delicate nose of white flowers and white peach skin. Aromatics blossom in the glass, great amplitude and length, superb tension. This wine is starting to show its potential.

Dec 24th, 2018Лимонный курд, желтый грейпфрут, ананас, тонкий тон неспелого манго, ваниль, трава, мокрая галька, устричные створки. Ярко и концентрированно, но не тяжело, с точной, напряженной кислотностью и минеральным финишем. Ещё молодо, но уже хорошо. Чисто и собранно, легко пьётся. Структура обещает интересное развитие.

Dec 11th, 2017Mr. Pico. What do you do to your wine? You spin Chardy into a drug! A crazy nose that evolves in the glass - Floral, mineral, pear, lees, iodine, smoke. Rich, viscous palate. Finish that last for ages!
Note: To answer the question above, apparently nothing - no lees stirring, no new oak, not a long elevage
