Hijo de Rubentis, made à la méthode traditionelle. Same base as Ameztoi rosé. Much brighter and a persistent mousse. Strawberries and watermelon and sea salt. Lovely.

Yummy, interesting pink bubbles on this warm Friday evening. My first Ameztoi wine, definitely a fan and for sure going to seek out their regular white Txakolina soon. Pours a pale copper-salmon hue. Moderate concentration of aromas of slightly underripe wild raspberry and strawberry, wet stone minerality, jalapeño oil and dried herbs, and some savory, yeasty lees influence. The palate shows very similarly as well but with a bit more ripe fruit character. High intensity, cutting acid, very dry, with medium (-) body but with a really fantastic, soft creamy texture from lees and an *incredibly* fine bead of decently aggressive bubbles. Really solid wine for the pizza loaded up with pickled peppers that I ate with it.
