Gaaaaahhh. Halfway through the bottle (at this stage in the wine's life) the hefty sugar and piercing acid settle upon a magical ceasefire and the wine is suddenly luminous and addictive. Begins begging the question "what more do you want from your kabinett anyhow"

So. Much. Acid. Fresh cut pears, lime zest, apricots and the smell of a fresh rain. I read that this wine usually has over 55g of residual sugar but the acidity balances things out with so much precision. Crazy stuff
