Now, to top off the Rhone tasting for the weekend. I wanted to pull out some special juice from the cellar and this hit the spot. Sabon’s Secret de Sabon is an ethereal wine in any year- in my mind, it is the perfect, benchmark Chateauneuf. The ‘07, at 13 years old, is jaw dropping. Intense black fruit, kirsch, layered floral notes, mixed with incense and beef blood. Too concentrated to be believed but perfectly balanced. The tannins are like velvety silk gliding across the palate. The wine is almost all Grenache from 80 - 100 year old vines grown in sand and stone and aged in small barrels. Great cdp, savoury smoky meats full on the palate with some sour cherries and tinge of oak. Great with the lamb soup and fried quail
