Yamahai-Jikomi Junmai-Shu

Medium lemon; medium intensity aromas of umami, cereal, yoghurt, salted nuts, toffee, white flower, vanilla; dry, medium acid, high alcohol, full body, medium plus intensity flavors of cereal, yoghurt , lemon curd, banana pudding, salted nuts; long finish, very rich and savory

Funk and melon and holy god this is fun.

Sweet, floral, octanol, less fruity

Deliciously soft and floral. Tasty.

In the presence of the Dassai 39, this was like drinking chicken soup. Too umami. Nose of mushroom soy sauce. Palate was primarily the same, good concentration, with accents of honey, hazelnuts, and ginger. No detectable fruit. I enjoyed the acidity and sapidity, but honestly not the easiest to drink.

The Vin Jaune of nihonshu! All that nuts and soya sauce characters on the nose. Full flavoured and weighty on the palate. Savoury, spicy, creamy, buttery, with a citrusy touch. Love the sort of white phenolics in finish. Lots of drive with a round acidity. Admirable finish. First time trying this style of saké. Admittedly, I'm not 100% sold on it yet, but it is tasty and a must-try when diving into this beverage.

Liked dryness, didn't like the taste

A little too round/floral for me. But would probably enjoy more with a fatty pork dish. The taste flavor and consistency of this sake demands that type of meal.
