35 year old Sankt Laurent, sandy loam soils, grown biodynamically. Whole cluster maceration, spontaneous fermentation, 9 months of aging in concrete egg. Unfined, unfiltered, low sulfur. The nose is fresh and expressive, of what I can make out: stone fruit, citrus and salty. As for the profile: tart strawberry, kombucha, blood orange(!!), salty finish. Bottle says 10.5% but I don’t believe it. Tastes like straight juice. — 3 years ago
