Mony Vineyards – Tale of Rosé 2024
Judean Hills – Israel 🇮🇱
Overview
“Tale of Rosé” is a dry rosé made by Mony Vineyards, using 100% Cabernet Sauvignon. Made after a nocturnal (late-night) harvest, the grapes are gently pressed to extract color lightly. (Educational note: dying rosés in this style helps preserve vibrant fruit and cool acidity by avoiding too much skin contact and heat.)
Aromas & Flavors
On the nose: strawberry, red berry, maybe watermelon or cherry tones; fresh red fruit more than anything. There’s some grapefruit or citrus zest in the background, giving brightness. Slight floral lift.
Mouthfeel
Light to medium-bodied, with crisp acidity and a clean finish. The color extraction is delicate, so tannins are minimal / very gentle, texture more about freshness. Finishes dry, with a little tartness.
Food Pairings
Great with lighter foods: grilled shrimp or fish, fresh salads, goat cheese, or mild poultry. Also works well with dishes with mild heat or spice, where the acidity can help cut through.
Verdict
Tale of Rosé 2024 is elegant, fresh, and easy to enjoy. It’s not a heavy rosé — it’s meant to shine with its fruit and crispness. A lovely summer-friendly bottle or aperitif-style pour. 🍷 — 7 months ago

Food Pairings
Great with grilled fish, fresh salads, Mediterranean mezze, or light poultry dishes. Also works well as a casual aperitif.

Mony Caladoc Rosé 2024, Judean Hills, Israel 🇮🇱
Overview
100% Caladoc (Grenache × Malbec crossing). A structurally serious grape rarely seen as a standalone rosé. Grown in the Judean Hills and crafted into an unexpectedly balanced, food-driven rosé. A wine that proves technique can tame phenolic power into elegance.
Aromas & Flavors
Wild strawberry, pink grapefruit, pomegranate skin, subtle red currant, faint herbal lift, and a mineral undertone. Hints of blood orange zest on the finish.
Mouthfeel
Medium body for a rosé, noticeable structure yet polished. Bright acidity carries the wine, while the phenolic grip adds backbone without aggression. Clean, persistent finish with savory tension.
Food Pairings
Grilled Mediterranean fish, tuna tartare, roasted vegetables, lamb kebabs, shakshuka, or mezze spreads.

Mony Vineyard Chardonnay–Semillon 2019 — Judean Hills, Israel 🇮🇱
Overview
A semi-dry white blend from the Judean Hills composed of Chardonnay and Semillon (12% ABV). A thoughtful, layered expression that leans more intellectual than crowd-pleasing, structured, textural, and quietly complex.
Aromas & Flavors
Light lemon curd, honeysuckle, subtle orchard fruit, and a faint oxidative/reductive whisper that adds intrigue rather than distraction. Gentle creaminess woven through citrus zest and soft stone fruit tones.
Mouthfeel
Medium body with a distinctive texture, soft, slightly creamy, yet structured. The Semillon brings weight and roundness while Chardonnay keeps tension and line. Long, reflective finish that lingers with citrus oil and floral nuances.
Food Pairings
Roasted chicken with herbs, baked sea bass, creamy mushroom risotto, mild curries, or aged Manchego. Also compelling on its own as a contemplative glass.
Verdict
A wine that makes you pause. Complex to the bone and multilayered, it rewards attention and patience. Not a simple “patio white”, this one asks questions and invites conversation. Possibly too nuanced for the casual white wine drinker, but deeply satisfying for those who enjoy texture and structure.
