Opening bottle for a special night out, paired with a modern Korean tasting menu. Color is a knockout goldenrod, with the bottle age bringing a rounded, textured mouthfeel really matching the raw fish, Unami notes, & intricate textures of the first 2/3 of the menu. Dried apple, sulfured apricot, & celery notes. Elegant & pretty long. While dry really approximates an aged German Reisling, with such a plump, yet refined acid backbone. — 3 months ago
Straw, medium viscosity. Ripe citrus: Meyer lemon, key lime, lemon curd; ripe yellow apple, red grapefruit pith. Vegetal with notes of watercress, celery, and cracked white pepper.
