Hierbas (“yeerbass”) is a balearic tradition. Herbal liqueur, usually served over an ice cube or two after dinner. In many restaurants it was complimentary, and Ibicencos were delighted if you expressed interest. Some restaurants on Ibiza and Formentera produce their own. This was one of our favorites—not as sugary as the more commercial varieties with amazing aromas of thyme and rosemary. A great liqueur. — 5 years ago
