Star bright pale straw. Inviting nose of stony lime zest. Medium light palate yields lime (the fruit), lime (the mineral), and green apple peel supported by striking firm acidity from entry to moderate finish. Jolivet acquired this small (8 hectares) property in 2015 and the investment is definitely paying off. Star bright yellow gold. Inviting nose of yellow apple and lime rind. Echoed on the medium light palate with sharp flinty mineral and firm acidity. Lengthy finish trends toward grapefruit rind and slate. Jolivet’s Implipeaux property gives a solid silex experience that’s at home with haute cuisine (poultry and seafood in particular) and will upscale more everyday fare.
