En nariz fruta negra confitada, clavo, toques balsámicos. Toques dulces.
En boca notas de cacao, taninos medios altos, bien ensamblados. Buena acidez y buena persistencia. Algo yodado. Buen cuerpo.

Sonoma-based August Sebastiani’s 3 Badge Beverage Corp. (the new name behind Kirk & Sweeney rums, Uncle Val’s gins, and others) has launched its first tequila: Pasote, which is made by Felipe Camerena in the Los Altos region of Jalisco.
Made in part with rainwater instead of just spring water, it’s made using traditional methods and bottled in antique-style glass. The reposado and anejo are aged in former, American oak bourbon barrels. — 2 months ago
100% Pedro Ximenez from vineyards in Moriles Altos, one of the top areas within the Montilla-Moriles appellation. Vines are rooted in albariza (tosca hojaldrada) soils. Aged for an average of 3 years under flor in the solera system and bottled en rama (unfiltered). Intense nose with notes of toasted almonds and yeast. Sharp, very dry and saline on the palate.
