Cork pulled, double decant, 10H rest at time of notes.

Paired to a slow & low baked beef tenderloin with roasted root vegetables, several hours of low temperature patience required for a reward of a beautiful beef (Kinderhook Farm; Valatie, NY) roast at ~135°F.

Have not had in 5 years. Young as ever. Eternal. Smells like a 17 or 16. Super slate, Granny Smith apple flesh, woodlands, pine, apple skins, so lean and classic. The slate aromatic expression is wonderful. Awesome texture like icing on a cake and superb balance and freshness. What a finish. The unsung Prüm. Really compelling wine. Best showing ever. Such a huge core of fruit and mineral and the finish! This will last 25+ more year and this is my last bottle. What a great bottle. This is last of 4. I tasted this wine with Bert Selbach at the estate and was floored. Now the estate is sold and doesn’t exist anymore and Bert is retired. He was a great winemaker and if you ever find any of his stuff buy it. His Himmelreich and Domprobst stuff is top class and with age they transform . — a month ago

Monthélie Pinot Noir 1990

Nose has black cherry preserves, ripe mulberry, dry garden soil, slight tin notes, washed blueberries and damp leather.

Palate has light ripe (sweet) cherry, dried raspberry, dried tart cherry, dried leaves/leather, rose hip tea and moist soil. Lingering finish, acidity still present.

Cork pulled for slow oxidation at 10H, then double-decanted and 2H rest. All these bottles have been wonderful, glad to have more, ullage continually better.

Paired to asian-style rub, mesquite smoke, reverse sear (120°F slow heat, 10m rest, then high heat sear to 145°F internal), pork tenderloin. Perfection.

Light color. Super delicate and delicious. Orange zest, dusty, more raspberry than cherry, white currant? / incredibly elegant. Within the Muschelkalk bracket in the top 25 percentile range. Totally drinkable on its own. Let’s just say this is f…ing magic. Pinot at the top of its game. Would argue drink now. This is at its peak. I would not recommend a decant. Nez riche avec une forte impression sucrée que l’on retrouve en bouche aussi, gras, rond avec un peu d’acidité, finale avec de l’alcool et comme un sucre résiduel, 89. Clairement identifié comme Cotat.

Blind tasting lunch 2009 theme. Nose with strong sugar and sweetness impression that we find on the round and fairly fat palate, a little bit of acidity to balnce it but a finish with some alcool and residual sugar, clearly identified as F. Cotat. 88-89
