Nov 25th, 2021Very delicate “king” of Beaujolais. After 7 years, turned to elegant leather, truffle, mushroom and rosemary pork loin. The typical violets and sour cherries for this varietal jump out of the glass. It’s tannic structure is built for a way longer cellar life. Complex and palate cleansing while staying earthy and grounded. The finish is shy, but the acid makes you crave some funky cheese.

Definitely drinking in a bruiser style much larger than the 12.5% abv would make you think. If you have ever overcooked a pork loin in a crock pot, you know exactly what this strange bojo tastes like.
