So much green citrus! Lychee, ripe lime rind, lemon, sea air and tarragon, with a little hint of cantaloupe on the nose, with a light, crystalline body and color, with a very pale yellow green color, and a sharp acidic palate, with prominent green/yellow citrus, with notes of lemon, limestone, great acidity and a strong, zingy, fresh finish that goes on forever! Really special and perfect for sashimi.
