2021/4/21-24 with pork shoulder Neapolitan alla genovese, busciata di tuminia cacio e pepe, etc. Pours a yellow gold. This was wonderful on day 1, with lots of bitter almond, beeswax and stone fruit. On subsequent days it felt a little blowsy - perhaps this bottle at this age didn’t need the extra air.
