Granny Smith, white flowers, lemon, a bit of crushed rock too. A very dry palate with a very strong acid backbone and a phenomenal grip almost like tannins. Some lemon too here and there but a lean and straight forward wine. Very long persistence with some green apple and lemon. Perfect pairing with oysters...

No idea what we were drinking but it really worked with the spicy cod and still@swimming scallops thanks to the somm dry with minerality to spare and unique fruit acid balance
