They leave the grapes on the vine till after the first frost then pick and ferment on the skins they use wild yeast so when it gets cold the fermentation stops and when it warms up it goes through Malo at the same time then they press after one month 80 grams of sugar but very balanced and fresh orange blossom with a long layered finish very balanced rich but not over the top.
