Made from 100% Pinot Noir via the saignée method with 5 g/L dosage. This is the label of the son of Christian of Saint Chamant. Paired well with Tuna Tartare. 12% ABV.

I've been thinking about this one all day. Nothing better with smoked trout, avocado and grapefruit salad (a la Gjelina). So raspberry fruity, but serious as hell, powerful, perfect right now.
