Pretty yeast Light, showing a touch of that super pleasant vintage champagne nose. Fun I beg forgiveness for typos, yet Delectable will not let me scroll up to see what I’ve typed.

Great structure and complexity (due to the sur lees aging?), not too sweet, not too acid. Honeydew, golden smith, somehow nutty probably hazelnut? Dig it....

While chatting with winemaker and proprietor, Hugh Davies, I asked him what he thought about zero dosage, extra brut sparkling wines. He told me that his wines have more than enough acidity due to cooler maritime climate, after tasting the Blanc de Blancs I'm inclined to agree. A shift in the 1.0g/L dosage would indeed result in a wine that is too austere. This 2012 is superbly balanced, with sappiness and weight at the core balanced by pent-up acidity and notes of lemon pith, saline, ginger, and brioche. Sample

Wow. Nutty, toffee like nose with an elegance underneath that is still so lively and fresh. Delicate, creamy bubbles, this was a real treat.
