Correct spelling: Sawanotsuru 'Zuicho' Junmai Daiginjo Sake Very floral at first. With sweeter foods it became tart with a nice almost minerally bitter edge. Then over the course of dinner began to notice a citrus edge to the finish, almost a lime note. However after a Yuzu sorbet the sake took on a vanilla and grain flavour. Very interesting to sip.
