Stellenbosch Shiraz

Being the last bottle of a case, I knew to decant this early. When first poured it is closed and a little boring (though still perfectly drinkable). After half an hour the chocolate, jam tart, liquorice (mint too?) starts to come out, the colour goes from brown to ruby, and it just gets better after that
