Earthy, parsley seed, turnip root, horseradish makes this pair incredibly well with all kinds of savory dishes. This has an insane amount of mineral depth. You can taste roots going deep through flinty soil and schist. Then you have a citrus aspect. Bright lime juice, lemon zest. It’s all there and makes this wine so versatile.
