Aug 28th, 2013Paired it with roast pork and it went just fine (salt, pepper, lemon juice, herbs for the pork). At first the palate did not match the concentration of flavors on the nose (thought it might have been over the hill), but exploded after 10mins into honey, dried flowers and dried apricot. Then seemed to disappear after 10mins only to come back with one final burst of energy as we got towards the end.
