Cleaner/more perfumed nose than expected from these gents, while exactly the texture craved. Draining it.

Truffles, barnyard on nose. Tastes like apple peel, stems, spongy bark, nutty mushrooms, white pepper. A little acid on finish gives it a clean soft tannic quality.
