No change in rate, perfect off-dry honeyed medium + bodied Pinot Gris, paired with dumplings (partially with blueberries and partially with cheese). Pale lemon color, pungent aroma (acacia and honeysuckle), complex taste of candied fruits (apricot, peach), but with fresh acidity spine. Apr 20th, 2016Peach and honey, viscous and a bit mushroomy in the end. A bit too much alchohol for my taste but can be balanced with the right food. Needs time to open up.
Update: Improved quite a bit on day 2. Raising from 8,7 to 9.
