Okay I’m a sparkling savant maybe I like simpler sparklers but DAMN I love the balance on this fool. If you need more maybe you should taste more and learn about nuance!
Ran into this in October at the San Francisco Wine Contest double gold tour. Took a bottle home to try when not already filled with samples...Holy hell F Champagne! I love CAVA. This is so balanced, so not obnoxiously overdone with brioche notes so...I have Spanish sparkling taste buds. Dry as f, with that whiff of...citrus/apple/pear/yeast/mineral lime everything? I LOVE CAVA!
