Super crisp and tart. Crunchy gooseberry, star fruit, jicama, lime, lemon zest, wet river rock, oyster shell, unripe green apple, basque cider. Super fine creamy mousse. Excellent for shellfish, sushi, and oysters. Extremely refreshing.

wow- this is so nice and balanced! lightly yeasty, a little more demi than demi-sec, if that makes sense and very refreshing- I could drink a bunch of this with a whole bunch of oysters... lobster... shrimp...
