Jun 1st, 2022Whole cluster fermentation & skin contact for 6 months in clay amphorae. Spontaneous fermentation, non filtered, non fines, w/o sulfites added.
This is very orange / natural territory.
Intense and savoury with dried apricots & herbs, fresh champignons, dried orange peel, a touch of hay, bitter orange Marmelade.
Quite a presence on the palate, with pronounced tannins, sharp acidity and dried fruit & mushrooms. A healthy does of salt, too. This is absolutely not shy, tough slightly too funky for my taste.
