Sweet, bitter, salty, umami, acid. Basically just named all the essential components for a balanced dish, and that's just exactly what this is - the perfect food saké! Probably my most drank saké this year, and for good reason. Love it.

Dec 2nd, 2019An ever-reliable pour in our household when all else fails. Typical bitter sweet balance with salty undertone. Perhaps a touch more savoury than previous bottles, but not a dealbreaker for me.

Feb 12th, 2019Crisp and elegant. Citrus, lychee, melon, and a light salinity. It's got a pleasant sweetness and excellent acidity to balance it out. I really enjoyed it, although the finish and texture wasn't quite convincing.
Update: Had a look at it again after a few days. Wow! Another rice wine Kabi. More salinity, more texture, and more umami. The acidity has integrated, fruitiness and sweetness mellowed out, and a mild yet pleasant bitterness has developed. A damn elegant saké.

Nov 18th, 2016I'm no sake connoisseur, but this is clean, slightly fizzy, ends with a sharp, assuaging finish. Grilled meats and fresh sashimis to complement its finesse. SawaYEAH.
