Wonderful minerality, Timorasso, the white Piemonte grape that has had a big comeback. The mouth feel adds a little bit of green apple and apricot, which gives it extra tartness. (I need to get back to Piemonte!)

We had heard about the rare Timorasso grape, and we got to share a bottle through the generosity of Parmissima Amanti at Enoteca Vino Nostro. The wine was tart, with faint peach and violet tastes. It would be wonderful pasta and white sauce, or with delicate fish.
