This evolved nicely over the three hours it was open, with the mouthfeel becoming more rounded with air. Black cherries, blackberries, black licorice, and just a hint of black olive, all carried along by significant acidity. No hurry on this one.

Day one: Needs about an hour of air to get going. Nice but hoping this improves some with age. Day two: after sitting in a Savino over night this was really singing the second day. Bursting with herbs and licorice, round, full brambly fruit, yet still grippy tannins.
