Le clos d'Elpis, Elpis côtes catalanes 2020, grenache gris vinifié en amphore.

Opened last saturday and drunk half of it. Kept in the fridge under cork since then. Upon opening the wine was muted and very savoury and salty. It lacked fruit. It was very mineral. Now, after a week of being opened, it's evolved significantly. The nose shows great pear and white peach notes, some crushed rocks, some matchbox scents, and a bit of a marine / iodine touch. The palate is acid driven, with some salty and savoury notes all along. There is width and matter too. It's a gastronomy wine which requires some food to express its fruit and all its potential. Some discreet peary notes appear, discreetly, behind the savoury notes. There is some grip in the rear before a long, acid-driven finish which shows salty pear notes and nice, grippy layer that goes on for a good while. It's certainly not an easy-access wine and I definitely don't recommend to drink it on its own, but with the right meal (think grilled white fish, rice and vegetables) it's a great wine.
