L'Antica Quercia
Su' Alto Indigeno Sui Lieviti

A very different presentation of Prosecco, compared to both ordinary Prosecco and Asolo. This lightly sparkling Frizzante is somewhere between a Prosecco and a Pet-Nat. Very yeasty, especially in the finish , with a sourdough flavor to finish. The nose is also very yeasty. Certainly different, unique, and interesting, but not for those expecting a Prosecco. Worth trying for the novelty but I would not purchase again. And I am not sure what food this would go with, but perhaps sardines or anchovies.
