This has lots of cut and mineral backbone. a bit harsh when cold, but mellows with solid medium body, subtle oak, tree fruit, and vivid minerality.

Very acidic while chilled. When warmed up it gets easier to handle. Hints of apple, grapefruit, and some tart citus notes. Medium bodied with good oak and light butter finish.

Apple and maybe some orange blossom. Possibly grapefruit on nose. Some acidity without food. Buttery but acid and sorta balanced. Grapefruit on taste and finish with chicken dijon. The acidity of this pairs well with a creamy chicken dish.

Grapefruit and crisp pear with hints of butter and vanilla. A nice finish with buttery notes and a bite of acid with a lingering finish of grapefruit notes. Pairs beautifully with Chicken Dijon.
