Katoukichibee Shouten Brewery Born 38 Special Junmai Daiginjo sake. Rice grain milled away to 50%, no brewer's alcohol added. Floral on the nose with jasmine and white linen. Delicate and ethereal with an unexpected spicy finish. Served with a teriyaki of Wagyu beef tenderloin, pumpkin, asparagus and onigiri rice. Followed by a dessert of poached white summer peach, Japan pearls, Suntory dry gin espuma, exotic sorbet, and petit fours.
