The nose is reminiscent of cidre fermier (farm cider) with a bit of funk at first thqt blows away after a while. The comes honey, apple and some yeasty notes. There is a bit of chalk too. The palate is honey and green apple forward, with a good acid drive, some width, some chalky notes, a bit of grip in the rear and a long persistent finish. Great stuff. We have it along mussels served with green bell pepper and chorizo and it goes super well.

The palate is very well done, with some good acid drive, some honey touches and some nice pastry notes too. Long finish with some lingering honey and apple notes. Really cool, despite the funk at first.
