Origin Auxerrois Maceration
On my quest to find the enjoyment of drinking natural wines I came across this Alsace Sylvaner, and my dissatisfaction continued but waned as this chilled wine came to room temp. Now visually it belongs in a hospice bedpan not a wine glass. On a positive note while chilled it smelled like opening a box of yellow raisins, atleast at room temperature I get stewed McIntosh apple, a touch of minerality, pine and cedar notes.
On the tongue I immediately have the sense of grittiness and I wonder if I'm not drinking an unfiltered cider- it's tart but not acidic and there is a surprising presence of tannin and definite wood notes. Ohh sometimes I long to have the palette of a hipster to actually enjoy these bottles.

Funky on the nose; hits you with subtle notes of gorgonzola or blue cheese, and green tomatoes. Viscous texture, but does not coat your mouth. Flavors of plum, pear, and nectarine. Crisp and acidic on the finish. Awesome wine.

Aug 17th, 2021This was pretty one dimensional at first but second half really opened up. Vanilla, lavender. Probably better on a spring afternoon outside than on a wet Friday night indoors but c’est la vie.
