2022/2/10 with buri daikon, etc. Very nice, with lemon tart, brioche, and chalk. While it’s not yet mature, that rich, toasty character that great blanc de blancs when it is really ready to start drinking. Much drier than the Conversation (which of course is brut - but it’s a bigger difference here than it is with some wines).
