Strange wine, strangely delicious and to my experience atypical to the Txakolina exported to the USA. 95% Hondarribi Zuri and Petit Corbu with the remaining 5% Gros Manseng: all organically grown fruit -worth mentioning as it's apparently the ONLY winery in the PDO Txakoli Getaria that is ecologically organic and without pesticide/chemical fertilizer. It is pressed after a 24hour maceration at 50degF fermented in stainless steel tanks at 60degF with 4-6 months on the lees. All CO2 is natural (vs the typical injection by producers in Txakoli). Drinking it is like sipping liquid stones soaked in green apple skins, like zest and underripe pineapple. It's got a fair blast of SO2, so let it breathe (for a day). Ripper acidity and a slightly pithy-pucker to the finish. Pithy pucker, say it, it's fun.

First day in San Sebastian I found this bar where they serve patrick piuze's chablis, ganevat's tout beauté and l'anglore's rosé by the glas. This is the txakoli they pour: salty, mineral and vivid! Great pintxos too by the way.
