Starting to show some complex notes with the vintage being from 2011. Yogurty, creamy, almost like soil and leather in the aromas. Interesting and layered.
Brioche notes are turning into a yeasty nuttiness. The color has become more golden. Leesy. Bubbles have softened. I like it. How do I drink more aged champagne (even just 10+ years, it’s fine)
First time shucking oysters!

Jul 22nd, 2024Great bottle for the price. Discovered similar bubbles from same maker at Seaworthy in New Orleans by the glass. All the while eating east/west coast oysters. Purchased at Keif & co.
