Hubert Paulet
Brut Millésime 1er Cru
Remarkable, great acidity! Beautiful taste and smell.

Apr 1st, 2019Golden copper in the glass with a good amount of small bubbles. Nice effervescence and creaminess. Still lively in a terrific drinking window right now. Green apples and marzipan on the somewhat subtle nose along with red cherries. So much yeast on the nose. Baked bread gently begins to dominate after getting some air. Fuller bodied and a bit tight upon opening, it’ll need time before it fully expresses itself.
Equal parts Pinot Noir and Chardonnay with 20% of Meunier, it’s a classic composition with classic results. Smooth in the mouth with lively acidity. The age lends this bottle some elegance and attractiveness. The palate follows the nose closely with plenty of yeast and citrus fruit. Pleasant is the word that jumps out to me. Nice, long finish with a hint of spice. A really pretty bottle with enough depth.
