For instance this bottle of Hollick Estates ‘The Bard’ 2016 Cabernet Sauvignon from South Australia’s Coonawarra region is matched to Chef Justin Williams slow cooked beef cheeks 🤤 yum!

I left this one in the palate of Mr Spittoon to taste and here are his notes (unedited by the way!):

👀 deep ruby
👃🏻 aniseed blackcurrant cedar cherries
👅 fruity black currant defined tannins at the finish vanilla

A juicy wine with a dry finish.

Watch out Robert Parker and Halliday, Mr Spittoon is crushing it 😂
