Metodo Classico from Südtirol (alpine region northeast of Italy).
Selection of Chardonnay 85% and Pinot Noir 15% fermented once in steel vats, after bottling, in springtime, they do a secondary fermentation inside the bottle, so 24 months ageing on the yeasts. Franciacorta is a better known appellation place name for sparkling wine even though the majority of them are always too dosé and over sirupy. Here instead we've got such a straw crispness already at the nose, a cristallyne weave, coolness and goldmine shielded into each of the infinitesimal bubbles.. one bottle for two runs so fast that you do not even have the time to say: "ciao"! http://haderburg.it/lang/EN/homepage.html
