Our Evidence to become Alsace Riesling enthusiast (at least according to The Vivino app), fresh & mineral, with a small portion of this riesling typical smell. At the beginning was not so acidic, but with time and higher temperature it went more and more to the wild citrus side. Went perfect with hosomaki, but I think it was missing polish at the taste, especially at the finish.
