Good gravy. This was an incredible experience. Blood, olive brine, pepper, seaweed, and high toned red fruit. Beautiful acidity, light on its feet despite such heavy flavors

Rich and fatty. Dried black fig, violets, molasses, blackberries. Beautiful. Glad I have 5 more bottles to age properly.
