Gavi Cortese
This unusual varietal - the grape from which Prosecco is made - has a smooth grassy body with hints of honey and fig, with a restrained citric tang to the finish. We paired it with cherry drizzled chicken couscous and cumin-roasted carrot avocado salad.

Jan 5th, 2021Fresh and full of bright acidity. Tingling lemon-lime, apple, fresh green melon, and lemon grass. Chalky with healthy saline focused in the center. Seafood has a PIC.

Apr 19th, 2017Very good, not amazing. I have another bottle and may let it stay in the cellar until next year and try again to see if it ages better. Took it to an Italian BYOB and it was nice with everything ordered (pastas and shellfish)
