We let it age 4 years and it’s even better than we remember! Lots of musky funk on the nose. The palate has a lot of volcanic earth, saline, good amount of acid, but it’s softer on the palate (after eating young Gouda) than the regular Assyrtiko. Has a fair amount of funk on the palate as well. Also had candid lemon rind without the bitter after notes. - more acidic and bitter with tomato sauce but still excellent!
