After nine years, this sparkling has lost all its rose hue and gained a golden peachy tone. Smells of toasted almond and fresh stone fruit. The taste is complex! Lemon curd and nuttiness (or naughtiness, I’m not sure). A long and tangy finish, spicy almost (first time I’ve tasted that in a wine, impressive!). Amazing find paired with lobster and asparagus linguini in a white wine reduction sauce. Exquisite.
